Spinach Strawberry Saladfrom What to Expect: Eating Well When You're Expecting by Heidi Murkoff and Sharon Mazel
Here's a summer treat that you can prepare in just minutes. Skip the onion if it offends your tummy (or if you'll be doing some after-dinner kissing)–the salad's just as yummy without it.
Serves 2
4 cups (packed) baby spinach
1 cup sliced fresh strawberries (about 1/2 pint)
1/4 cup sliced red onion (optional)
1/4 cup toasted sliced almonds
2 tablespoons distilled white vinegar or white wine vinegar
2 tablespoons canola oil
2 tablespoons white grape juice concentrate, apple juice concentrate, Splenda, honey, or brown sugar, to taste
1/2 teaspoon paprika
Salt and black pepper
Place the spinach, strawberries, onion, if using, and almonds in a salad bowl.
Place the vinegar, oil, grape juice concentrate, and paprika in a small bowl and whisk to mix. Season with salt and pepper to taste. Toss the salad with enough dressing to coat evenly.
Divide the salad between 2 smaller salad bowls and serve.
