8 ounces softened cream cheese
1 tablespoon minced onion
2 tablespoons minced fresh parsley
2 teaspoons lemon juice
1 teaspoon dill weed
Salt and pepper to taste
1/2 teaspoon Tabasco sauce
2 medium sized fresh cucumbers
Blend cream cheese, onion, parsley, lemon juice, dill weed, salt, pepper, and Tabasco until well mixed.
Cut off both ends of the cucumbers. Using a potato peeler, peel one strip the length of the cucumber (width will be approx.1/2"). Move your peeler over (approx. 1/2") and begin to peel another strip the length of your cucumber. Repeat this process until the entire cucumber has been completed. Do the same for both cucumbers.
Slice the cucumbers into 1/4 rounds. Top with cheese spread. Makes about 20.
