25 chocolate wafer cookies, finely crushed
1 cup confectioner's sugar
1/3 cup honey
1/4 cup + 2 Tbsp creamy peanut butter
Preheat the oven to 350 degrees F (175 degrees C).
Mix crushed wafer cookies and confectioner's sugar in a large mixing bowl.
In a medium bowl whip together the honey and peanut butter until creamy and smooth.
Add the peanut butter and honey mixture to the cookie crumbs and stir well. Use your hands to shape the mixgture into 1 inch balls.
Store in an air tight container. Store at room temperature no more than 2 days.
Just before serving, roll the Baby Bites in a bowl of confectioner's sugar. Serve on a festive platter. This one is Divine!
