1/4 cup + 2 tablespoons packed dark brown sugar
1/3 cup trans-fat free spread (like Smart Beat) or vegetable shortening
1/4 cup chunky all natural peanut butter
1 large egg yolk
1/2 teaspoon vanilla extract
1/2 cup all-purpose enriched flour
1/2 teaspoon baking powder
1/8 teaspoon salt
2 oz. semisweet baking chocolate broken into 36 small chunks
Preheat oven to 350 Degrees.
Line a large baking sheets with parchment
Mix sugar, trans-fat free spread (or vegetable shortening), peanut butter, egg yolk and vanilla in a large bowl. Mix until ingredients are well blended.
In a separate bowl mix flour, baking powder and salt. Add to the peanut butter mix and stir until well blended.
Divide cookie dough into 36 cookies. Place on baking sheets. Lightly press each cookie down with fingers. Bake cookies until golden brown (about 9 to 12 minutes).
Remove cookies from oven and immediately press a chocolate chunk into the center of each cookie.
Cool completely on the baking sheet.
