This recipe will make a single serving, so multiply ingredient amounts by the number of guests
1/2 cup canned pumpkin
1/2 cup vanilla soy milk, or 2% regular milk with a tsp vanilla extract
1/2 cup crushed ice
1 tbsp honey or 1 tbsp Splenda or other non-calorie sweetner
1 tsp pumpkin pie spice
Blend well and serve chilled.
You can make several servings ahead of time by keeping the basic mixture chilled in your refrigerator. When it's time to serve guests, whip up batches with the crushed ice in your blender.
Serve right away.
