3 cups flour
3 eggs
1 tsp baking soda
1 tsp salt
2 cups diced banana
1-1/2 tsp vanilla
3 cups sugar
1 tsp cinnamon
1 cup oil
1 (8 oz.) can crushed pineapple, undrained
1/2 cup chopped walnuts
Pineapple Glaze
1/4 cup melted butter or margarine
1-1/2 cups powdered sugar
1 cup crushed pineapple, drained
Preheat oven to 350°F. Grease and flour a 9" or 10" Bundt pan. Beat eggs by hand, then mix, by hand, with other ingredients in this order: flour, sugar, salt, soda, cinnamon, vanilla, oil, bananas, pineapples, walnuts. Do not beat with a mixer. Just stir until well blended. Pour into Bundt pan. Bake at 350°F for about 1 hour or until cake tests done. Sprinkle with powdered sugar or glaze.
Pineapple Glaze
Mix together butter and powdered sugar until smooth. Add pineapple and stir until well mixed.
