Bacon Stuffed MushroomsBada Bada Bacon Stuffed Mushrooms

A staff member from Bada Bada BINGO shared this delicious appetizer recipe with us. Wow! Bacon, cream cheese, mushrooms, they're a little bite of heaven!

INGREDIENTS

1 pound medium-size fresh mushrooms

4 bacon slices

1/2 cup minced onion

2 tablespoons minced bell pepper

1 teaspoon salt

1/8 teaspoon pepper

3 ounces cream cheese, softened to room temperature

1/2 cup fine dry bread crumbs

1/4 cup hot water

DIRECTIONS

Wash mushrooms thoroughly. Remove mushroom stems and chop fine.

Fry bacon until crisp, drain on paper towels, reserving drippings. Dice bacon strips and set aside. In bacon drippings, sauté onion, greenpepper, and chopped mushrooms stems until tender. Drain vegetables on paper towels. Mix bacon, vegetables, salt, pepper and cream cheese.

Fill mushroom caps with a mound of bacon mixture by pressing the bacon mixture firmly into the mushroom cap a bit at a time. Place bread crumbs in a small bowl. Dip filled mushroom caps upside down into bread crumbs to coat the tops.

Place in a 9" x 13" x 2" baking dish. Add hot water to baking dish and bake, uncovered, at 325º F for 20 to 25 minutes.

Makes about 2-1/2 dozen stuffed mushrooms.
